2 tbsp butter 20 pearl onions peeled 3/4 cup red wine 1 tsp sugar 2 tbsp balsamic vinegar salt and pepper
Galettes
2 tbsp butter 4 cloves garlic crushed 5 large potatoes peeled and grated 2 tsp oregano 1 tbsp thyme 1 tsp rosemary 3 tbsp flour 1 cup chicken stock salt and pepper 3/4 lb raclette cheese grated 1/2 cup chopped cornichons

Directions:Onions Melt the butter in a heavy pan and saute the onions over medium high heat for 5 to 7 minutes. Add the wine and sugar and cook for about 15 minutes until onions are soft. Add the vinegar and cook until a glaze forms about 5 minutes. Season with salt and pepper. Set aside.
Potato Melt half the butter in a skillet. Add 2 cloves of garlic and cook for 1 minute. Add half of the potatoes , patting them into a flat cake and sprinkle with half the herbs and half the flour. Brown the bottom of the galette and pour over half of the chicken stock. Cover and cook until done, about 10 minutes.Slide onto a plate with the crispy side on the bottom.Fry the second galette as you did the first . Cover the second galette with the onions, cornichons and grated cheese. Cover with the first layer, crispy side on the bottom. Brown under a broiler about 3 minutes. |
