2 Boneless, skinless Chicken Breasts
3 Tbsp. Oyster Sauce
2 Tbsp. Soy Sauce
1 tsp. Garlic Powder or 1 clove Garlic, minced
5-6 Green Onions, chopped
1/4-1/3 lb. Snow Peas, cut in 1/2-1/3
4 Tbsp. Hoisin Sauce (Polynesian Barbecue Sauce)
1/2 C. Cashews (or more if desired)
4 Tbsp. Vegetable Oil

Cut chicken into chunks. In a bowl combine oyster sauce, soy sauce and garlic. Marinate chicken chunks in oyster sauce mixture, in the refrigerator; for at least 1 hour.
Add 3 Tbsp. oil to Wok or large skillet. When oil is hot add chicken to the pan using a slotted spoon. Stir fry chicken for 3-7 minutes, or until chicken has turned white in color. Remove chicken from pan and set aside.
Wipe pan clean with paper towel. Add remaining 1 Tbsp. oil to pan, when oil is hot add vegetables to the pan. Stir fry until vegetables are done. Return chicken to the pan. Add hoisin sauce to the pan and stir fry for a few minutes until mixture is warm. Toss in cashews and mix well. Remove from pan and garnish with additional cashews. Serve with rice.
