1 whole chicken, rinsed and patted dry
3 tsp olive oil
2 cloves garlic, minced
2 lemons
1 onion
2 springs rosemary
salt and pepper to taste

1. Preheat oven to 400°F.

2. Zest two of the lemons. Strip the leaves off of rosemary springs and chop it up finely.

3.In a bowl, combine olive oil, lemon zest, garlic and chopped rosemary.

4.Use your fingers to smear the mixture all over the chicken, under the skin, and inside the cavity. Cut the lemons in half and squeeze the juice of one of
lemons all over the chicken. Place the rest of the lemon and chopped onion inside the bird.

5. Place the chicken into the oven and roast it for 1 hour and 15 minutes. Cooking time will vary depending on the size of the bird. Skin should be deep golden brown and juices should be sizzling.
