15-1/4 oz. can Peaches in heavy syrup, use 1/2 C. of the juice. Cut peaches in small. pieces.
16 oz. can Pineapple Chunks, use 1/2 C. of the juice. Cut pineapple in 1/2.
17 oz. can Apricots, use 1/4 C. of the juice. Cut apricots in 1/2,
10 oz. jar Maraschino Cherries, cut in half (no juice)
1 1/2 C. Sugar
1 pkg. dry yeast or quick rise yeast

Directions:
Directions:
Combine all ingredients in a clean (non-metal) bowl; stir gently. Cover and let stand at room temperature for 3 weeks.
Stir several times the first day, then once a day for two weeks. Do NOT stir with a metal spoon.
At the end of the two weeks you will have the "Starter" to begin the 30 day fruitcake.

To replenish each 1-1/2 C. Starter, add 1 C. Sugar and one of the first 4 ingredients (Peaches, Pineapple, Apricots, Maraschino Cherries) every 1 to 3 weeks, alternating fruits each time; stir gently. Cover and let stand at room temperature 3 days before using.

This is the Starter you need to begin the 30 day fruitcake. You need to follow the Friendship Cake recipe for 30 days to make the cake. This involves advance planning, after you have this first Starter, it takes another 30 days before you can bake your first cake. Don't give up, it is worth it!
