1 1/2 lbs. carrots ( 7 medium)
1/4 C onions, chopped
4 T butter
1 1/2 T grated fresh ginger
1 tsp. salt
1/4 tsp. sugar
freshly ground pepper
4 C chicken stock
sour cream - optional

Directions:
Directions:
Slice carrots and chop onions. In a Dutch oven melt butter over low heat. Add carrots, onions, ginger, salt, sugar and pepper. Cover and steam in butter over low heat until tender - about 25 minutes. Add chicken broth and bring to a boil. Puree in blender or food processor. Return to saucepan to heat. Season to taste. Garnish with sour cream if desired.
