1 lb ground beef
3 cloves garlic, minced
1 1/2 tsp dried oregano leaves
1 jar (26 oz) spaghetti sauce
1 large tomato
1 egg
1 container (16 oz) cottage cheese
1/2 cup grated Parmesan Cheese
9 lasagna noodles
1/2 cup shredded Mozzarella Cheese

1. Heat oven to 375°. Cook your lasagna leaves according to package.

2. Brown meat with garlic and oregano in large saucepan. Add diced tomato and stir in spaghetti sauce. Remove from heat.

3. Mix egg, cottage cheese, and Parmesan in a separate bowl.

4. Spread 1/2 cup spaghetti sauce mixture onto bottom of 9×9-inch baking dish. Top with layers of 3 noodles, 1 cup cottage cheese mixture, half cup mozzarella and 1 cup spaghetti sauce mixture.

5. Repeat layers. Top with remaining noodles and sauce.

6. Cover with foil and bake 30 mins or until heated through. Uncover and top with mozzarella. Bake for 5 more minutes or until cheese is melted.

I am a sucker for lasagna. Lasagna is one of my favorite comfort foods, especially in winter. However, making it at home always proved to be a challenge. It was either too dry or too watery. After several disastrous attempts, I finally found a good balance.
