1 lb of ham
3 medium potatoes
4 medium carrots
1 can sweet peas, drained
4 boiled eggs
5 medium pickles
1/3 cup chopped onions
3/4 cup to 1 cup mayonnaise (to taste)

Directions:
Directions:
1. Boil eggs. In a separate pot boil potatoes and carrots for about 20 mins or until knife pierces through smoothly.

2. Let vegetables and eggs cool completely.

3. Chop ham, potatoes, carrots, pickles and eggs into equal size dice (pea size). Add peas and onions. Mix with mayo.

Note* ham can be substituted with cooked chicken, bologna, etc.

In Belarus this potato salad was a must at any holiday table. Each family has their own version which gets passed down through generations. It takes some time to dice everything, but in the end you get the best potato salad that lasts almost a week in the fridge. It's easy to modify this recipe just a little more or less of this or that.
