Strawberry Cake:
1/2 cup butter
2 T. vegetable oil
1 cup sugar
2 large eggs
1 t. vanilla
2 cups flour
2 t. baking powder
1/2 t. baking soda
1/4 t. salt
pinch of cinnamon

Frosting:
1 8oz. cream cheese, strawberry
1 cup sugar
1 carton of cool whip
2 pints of strawberries, sliced

Heat oven to 350 degrees. Butter and flour a 9 inch round pan. Beat butter, oil and sugar with mixer until light. Beat in eggs one at a time. Mix in vanilla. Mix flour, baking powder, baking soda, salt and cinnamon. Add to above mixture. Bake 35-40 minutes. Check doneness with toothpick.
When cool, cut cake in half with electric knife. On bottom layer, spread about 1/2 to 1 cup strawberry cream cheese. Over cream cheese, spread a thick layer of frosting. Next, put the sliced strawberries. Put top layer on cake and frost with remaining frosting. Garnish with fresh sliced strawberries. Refrigerate.
