1 lb. pork tenderloin
2 tbsp. low sodium soy sauce
2 tbsp. reduced-fat creamy peanut butter
1 tsp. crushed red pepper flakes
2 cloves garlic, minced
1/4 c. mango chutney
vegetable cooking spray

Directions:
Directions:
Preheat oven to 375º.

Trim fat from tenderloin. Combine soy sauce, peanut butter, red pepper flakes and garlic, stirring well. Spread mixture over tenderloin. Place on a rack in a roasting pan coated with cooking spray. Insert meat thermometer into thickest part of tenderloin, if desired. Bake, uncovered, for 30 minutes.

Brush tenderloin with mango chutney and bake for an additional 10 minutes, or until meat thermometer registers 160°F, basting often with chutney. Remove from oven and let meat stand 10 minutes before slicing.
