Pumpkin Squares:
1 16 oz. can of pumpkin or 2 c. of fresh pumpkin puree
1 c. oil
1 2/3 c. sugar
4 eggs
2 c. flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 c. chopped walnuts

Cream Cheese Frosting:
3 oz. cream cheese softened
1 stick butter
1 tsp. vanilla extract
2 c. confectioners sugar

Directions:
Directions:
Preheat oven to 350º.

15x10x1 in. baking pan ungreased.

Pumpkin Squares:

Mix together first four ingredients until light and fluffy.

Sift together next five ingredients and incorporate with first four, blending together until smooth. Add optional walnuts.

Pour into baking pan and bake for 25-30 minutes.

Cream Cheese Frosting:

Mix cream cheese and butter until smooth, add vanilla and mix thoroughly.

Slowly add 2 c. confectioners sugar until completely blended.

Frost cooled Pumpkin Square, slice and serve.
