Crust:
1 1/2 cups flour
1/2 cup sugar
1/8 t. salt
9 T. chilled butter (cut up)

Filling:
1/2 cup flour
1 1/2 cups sugar
1 1/2 cups low fat milk ( I use canned milk)
3 large eggs
5 cups chopped rhubarb

Topping
1/2 cup powdered sugar (or regular)
1/2 cup (4 oz.) fat free cream cheese
1/2 cup (4 oz.) 1/3 less cream cheese
1/2 t. vanilla
1 cup Cool Whip ( I use more)

Directions:
Directions:
1. Heat oven to 350º
2. Combine 1 1/2 cups flour, 1/2 cup sugar and salt in a bowl. Cut in butter with pastry blender ( I use a fork) till crumbly coarse. Press into a 9x13 glass, sprayed pan. Bake at 350 for 15 minutes.
3. Combine 1/2 cup flour and 1 1/2 cups of sugar in a large bowl. Add milk and eggs, stirring with whisk till well blended. Stir in rhubarb mixture. Pour over crust. Bake º 40 minutes or till set. Cool.
4. Topping: Place 1/2 cup sugar, cheeses and vanilla in a bowl.Beat with mixer until smooth then fold in Cool Whip. Cover and chill 1 hour.
