For best results, cook this in a black iron dutch oven...

1 chicken cut up
5 tbsp cooking oil or more if needed
1 med. onion chopped
1 bell pepper chopped
1/2 stalk celery chopped
a dash or 2 parsley flakes
16oz tomatoe sauce
1 cup water or more if needed
salt and pepper to taste
hot cooked rice

Heat oil in dutch oven, season and brown chicken... Remove chicken from pot... Sautee onion, bell pepper, and celery until wilted... Add chicken, parsley, tomatoe sauce, water, and seasoning... Mix well and simmer for 45minutes... Serve over rice with hot garlic bread...
