1 pound Opah or other firm fish, cut into 2-3 fillets
½ stick butter
¼ cup diced red bell pepper
¼ cup diced orange bell pepper
¼ cup diced sweet onion
¼ cup lemon citrus Ponzu sauce
½ - ¾ cup sweet chili sauce
1 tsp. Lemon & Herb Old Bay
1 tbsp. mint (roughly chopped)
1 tbsp. cilantro (roughly chopped)
2-3 Tbsp. maple syrup

Directions:

Prepare all of your ingredients.
Remove fish from packaging and place in a bowl. Sprinkle a few shakes of Ponzu sauce on the fish and set aside.
In a large wok (or skillet), melt the butter on medium heat.
Add peppers and onion – sauté on a medium-low heat (stirring a lot so the butter doesn’t burn) for about 2-3 minutes.
Add Ponzu and chili sauce – continue to sauté for another 5 minutes.
Carefully place the fish fillets in the simmering sauce
Sprinkle the Lemon & Herb Old Bay onto the fish
Cover and cook for about 5 minutes (or until the fish is a little more than half way cooked)
Turn the fish over and sprinkle on a little more Lemon & Herb Old Bay, add the mint & cilantro and drizzle on the maple syrup
Cover and cook until done, about 3-5 more minutes depending on the thickness of the fillets.
Take the lid off and spoon some of the sauce over the fillets, remove from heat and serve.
I found that a small sprinkle of salt enhanced the flavors.

One of the chefs at Wegmans had a similar dish out for sampling. I got the basics from him and came up with this. I had never heard of Opah fish - but boy oh boy is it good. Like a nice flaky white fish, but more sturdy like Tuna, Swordfish or Mahi Mahi, which are good substitutes if you can't find Opah.
