1 c. soft butter
2/3 c. sugar
3 egg yolks
1 t. almond extract or 4 t. grated almonds
2 1/2 c. flour

Mix first four ingredients together thoroughly. Work in the flour.

Force the dough through cookie press onto ungreased baking sheet in shape desired. Bake until set but not brown at 400º approximately 7 to 10 minutes.

You can add food coloring to the dough to make brightly colored cookies. And it is traditional to decorate them.
