1 cup Quaker yellow corn meal
1 cup sifted all-purpose flour
1/4 cup sugar (optional)
4 tsp baking powder
1/2 tsp salt
1 egg
1 cup milk
1/4 cup shortening, softened

Directions:
Directions:
Sift together corn meal, flour, sugar, baking powder and salt into a bowl. Add egg, milk and shortening. Beat w/rotary beater until smooth, about 1 minute.
Bake in greased 8" square baking pan in preheated hot oven (425°) for 20 to 25 minutes.
