Ingredients:
Ingredients:
1 cup butter
1 cup sugar
1/2 cup packed brown sugar
1 egg
2 teaspoons vanilla
1 2/3 cups flour
3/4 teaspoon baking soda
1/8 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
Dash nutmeg
1 1/2 cups rolled oats

1 can sweetened condensed milk

Directions:
Directions:
Preheat oven to 350º.

Cream butter and sugars together until light and fluffy. Add egg, and beat until smooth. Add vanilla.

Combine flour, soda, baking powder, salt, cinnamon, and nutmeg. Stir into butter mixture, and then add rolled oats. Roll into small balls (about the size of large gumballs or the size of a quarter), and flatten with glass dipped in sugar.

Bake 10 to 12 minutes or until bottoms are golden. Cool on wire rack.

Put dulce de leche between two cookies to make a fabulous caramel oatmeal cookie.

Dulce De Leche:

You will need a sealed can of sweetened condensed milk. Place the sealed can on its side in a crockpot. Add water to crockpot until can is completely covered with water. Set crockpot on low, and cook for 8 to 10 hours.

After cooking for the desired time, place the can in cold water until it is room temperature. Don't open the can until it is room temperature or hot caramel may spray out.

Open the cooled can, and you have a dark brown, wonderful tasting caramel called "Dulce de Leche".
