Turkey (15-20 lbs.)
Salt, pepper, garlic powder
Poultry seasoning, paprika
Olive oil
1 bunch sage
1 bunch thyme
1 bunch parsley
Whole small onion

Directions:
Directions:
Turkey Gravy

Using neck and giblets, put in small pot with carrots (2), small onion, celery (2 stalks), salt and pepper
Cover with water, bring to a boil and simmer 1 to 1-1/2 hours while the turkey cooks
Strain
After resting the turkey, take some fat off the turkey juices and make a roux with 1/4 cup flour
In a pan, add giblet liquid and some turkey juices and heat until the gravy thickens
Serve with turkey
