1 cup firmly packed brown sugar
3/4 cup transfat free soft tub margarine spread
2 lg egg whites
2 tsp vanilla extract
1 (15 oz) can chickpeas drained, rinsed & chopped in the food processor-i almost puree mine

2 tbsp wheat germ (optional)
2 cups semisweet chocolate chips
3/4 cup chopped walnuts (optional)
3/4 cup raisins (optional)
2 cups wheat or white flour
1/2 cup old fashioned oats
1 tsp baking soda
1/4 tsp salt

Preheat oven to 350* Coat baking sheet with spray or line with parchment paper.

In a large mixing bowl beat sugar & margarine until smooth. Beat in egg whites & vanilla, then the chickpeas, chocolate chips & raisins-if you're using them. Add the flour, oats, baking soda, wheat germ & salt, & mix on low speed until a thick dough forms.

Drop the dough by tbsp onto the baking sheet. They puff up more than they spread when they cook. Bake until cookies are starting to get golden on to & just set. 11-13 minutes. DO NOT OVERBAKE!! They will dry right out.
