Bag of frozen prawns (25-35)
½ small red onion
Small bottle of Sweet Thai chili sauce
1 Tsp butter
Green onions
2-3 Tsp soy sauce

For the Side
Fresh mushrooms
1 each red, orange and yellow pepper
I clove garlic, crushed
2 Tsp soy sauce

Directions:

Defrost Prawns, rinse and peel off the shells

Heat oven to 350

In a baking dish put in the defrosted prawns, thinly sliced red onion, about a cup of the sweet chili sauce, soy sauce, and butter.

Bake in the oven until prawns are pink and cooked through (about 15 mins)

In the meantime while the crustaceans are cooking – slice and stir-fry the mushrooms, peppers and garlic until desired tenderness. Add in the soy sauce just before turning off heat and stir.

Serve with jasmine rice.
