A pack of large soft tortilla shells (not ones for wraps)
Either 3 Steaks BBQ’s to your liking OR ½ of a Rotisserie Chicken from Price Mart
1 Bag of Shredded Tex Mex Cheese (I use the No name Shredded Nacho Brand from No Frills)
1 of red enchilada sauce
1/2 Can of peaches n cream corn (NOT cream corn)
1/2 Can of black beans
1 jalapeño pepper
1 small onion
1 can of diced Mexican style diced tomatoes (DO NOT DRAIN)
Green onions chopped
Sour Cream
Guacamole
Salt n Peppa
Directions:
Directions:
Pre heat oven to 350
Shred the rotisserie chicken or thinly slice your grilled steak, set aside
Drain the corn, Drain the beans
Cut J pepper and scrape out the seeds, and the small onion… chop finely

In a frying pan, sauté the onion, and pepper and a bit of salt n peppa till onions are translucent, then add the drained corn and beans and sauté another few minutes.
Get the shells and roll up with a bit of meat, cheese, mix of the sautéed ingredients place in a back in dish and repeat till you’re out of shit.

Pour the diced tomatoes over the top, then pour the enchilada sauce on top of that.
Bake in the oven for 15 mins
Take out, add the remaining cheese and green onions all over the top and place back in the oven for 10 mins.
Serve with Sour Cream and Guacamole
I usually add a salad on the side too
Voila - Coma hasta que usted puke!!
