2 cups rice (rinsed)
4 cups of hot water
½ cup sofrito
1/2 teaspoon oregano
1 can of gandules
2 tablespoons of alcaparrado (capers and olives mixed together)
1 packet of Sazon with achiote
1 small can tomato sauce
1/2 chopped jamon de cocinar or salchichon
3 tablespoons of oil
Salt & pepper to taste

Directions:
Directions:
1) In a medium size caldero add the oil, sofrito, sazon, oregano, and jamon. cook 2 minutes.

2) Add tomato sauce, gandules and alcaparrado, Cook over medium heat for another 2 minutes.

3) Add rice and water

4) Bring back up to a boil.
When water absorbs down to top of rice, stir once, cover and reduce heat.

5) cook about 30 minutes or until rice is tender
