"Plain fresh bread, its crust shatteringly crisp. Sweet cold butter. There is magic in the way they come together in your mouth to make a single perfect bite."--Ruth Reichl

1 c water

Directions:
Crust:
Cut the butter into flour (crust recipe) as for a pie crust. Mix in ice water.
Pat it onto a jelly roll pan or cookie sheet with sides. I usually pat it into a large circle.

Pastry Top:
Bring water to a boil and add butter and extract. Once it returns to boiling, remove from heat. Stir in the flour, all at once and mix until a ball forms and flour is completely incorporated. Beat the eggs in, ONE AT A TIME.
Spread this mixture over the crust.

Remove from oven when the top is light brown. Let cool 10 minutes and lightly frost.

Frosting:
Combine the sugar and butter. Add the extract and milk or light cream. Mix until smooth.

Bake at 350ºF for 50 minutes.

Personal Notes:
This recipe came from a friend of ours in Kansas (they owned the Burger King in Manhattan). Sandy's family was from Denmark and this was a family recipe. It is easy to make and the result is like a Danish pastry with much less effort.
