Ingredients: Crust: ½ c butter 1 c sifted flour 2 TBSP ice water
Pastry Top: ½ c butter 1 c water 1 tsp almond extract 1 cup all purpose flour 3 large eggs
Frosting: 1 c sifted confectioners sugar 1 TBSP butter ½ tsp almond extract 1 TBSP milk or light cream

Directions:Crust: Cut the butter into flour (crust recipe) as for a pie crust. Mix in ice water. Pat it onto a jelly roll pan or cookie sheet with sides. I usually pat it into a large circle.
Pastry Top: Bring water to a boil and add butter and extract. Once it returns to boiling, remove from heat. Stir in the flour, all at once and mix until a ball forms and flour is completely incorporated. Beat the eggs in, ONE AT A TIME. Spread this mixture over the crust.
Remove from oven when the top is light brown. Let cool 10 minutes and lightly frost.
Frosting: Combine the sugar and butter. Add the extract and milk or light cream. Mix until smooth.
Bake at 350ºF for 50 minutes. |

Notes: This recipe came from a friend of ours in Kansas (they owned the Burger King in Manhattan). Sandy's family was from Denmark and this was a family recipe. It is easy to make and the result is like a Danish pastry with much less effort.
