3 cups cooked rice
1/2 cup chopped parsley
1/2 cup grated cheddar cheese
1/3 cup chopped onion
1/4 cup chopped green pepper
1 clove minced garlic
14.5 ounce can evaporated milk
2 beaten eggs
1/2 cup canola oil
1 tbsp. salt
1 tsp. season salt
1 tsp. pepper
juice and grated rind of 1 lemon
paprika for top

Directions:

Combine rice, parsley, cheese, onion, green pepper, garlic in a 2 quart casserole. Blend rest of ingredients except paprika and mix into rice. Sprinkle with paprika and bake at 350º for about 45 minutes to the consistency of a soft custard.

Stephenson's Old Apple Farm Restaurant was around Lee's Summit, MO and we used to stop here for dinner on our way back to Columbia from Kansas City. It closed in 2007 but had wonderful homemade apple butter and cider. We would have the green rice as a side dish!
