Lemon Jello Cake Recipe

1 pkg lemon jello
1 cup boiling water
4 eggs
3/4 cup vegetable oil
1 box lemon cake mix (Duncan Hines Supreme)

Icing Ingredients:
Juice of 2 lemons
1 1/2 - 2 cups powdered sugar

Directions:
Mix jello and water on high speed until foamy
Add eggs one at a time, beating between each addition
Add oil and beat
Add cake mix and beat
Grease a 9 x13 pan
Heat oven to 350
Bake 20 minutes
Turn oven down to 300 for an additional 15 minutes
When cake is done, remove from oven and poke holes in the top with a fork
Mix juice of 2 lemons with powdered sugar to make icing
Pour icing on cake and let it seep into holes
Let cool and serve

A great cook never gives out her recipe secrets – especially when they involve cutting corners! My guess is that even some of the best rely on Duncan Hines mixes, but would never, ever admit it! For me, a busy full-time working mom who frequently hosts guests at our Shabbat table, Duncan Hines mixes are a necessary staple. I always have 3-4 boxes in the pantry – just in case. My trick? Doctor them up, just a little bit, so the dessert doesn’t have that “box mix” look and taste. That’s why I am so grateful that my Mom gave me this cake recipe from Aunt Vivian, who was also gracious enough to contribute it to this recipe collection. It's a go-to dessert recipe for me that always turns out to be a crowd pleaser. It’s just what the “Cake Doctor” ordered!
