Slice onion and green peppers and saute until tender but not browned in 1 - 2 tsp Olive Oil. Set aside on paper towel to remove oil. Slightly beat the eggs with the water in a small bowl, do not over beat. Heat on High a clean Teflon type 9 inch skillet with about 1 tsp Olive oil. Just before the pan starts to smoke the oil, wipe up the oil with a paper towel ; this seasons the pan for the eggs. When you see the smoke coming from the hot pan, pour in the egg mixture and slightly swish the egg mixture in the pan. Using a spatula, slightly move the eggs from the outside edge towards the middle of the pan allowing the uncooked eggs to fill in behind you.Once you have all the egg mixture setting up turn off heat. Quickly placed shredded cheese on 1/2 the eggs so that you will be able to fold the other half on top when all ingredients have been added. Continue to top with ham, onions, peppers and some salt and pepper to taste. Take the spatula under the 1/2 of eggs with NO topping and carefully flop 1/2 the eggs over the other half sealing the other ingredients in the middle; then slide your eggs from the pan to a plate.

You can mix up several eggs in a large bowl and then use about 1/3 cup for each omelet. This works well when you are cooking for a group. Usually 2 large eggs and 2 T water is about 1/3 cup. Linda got this recipe at a conference in Topeka in the mid 1980's. This is also good with some cooked mushrooms and other types of cheese, but the American Sliced Cheese is my favorite.
