5 C water (can use part fruit juice)
1/2 tsp salt.
1/2 C plus 2 T of small pearl tapioca
3 oz pkg jello
1 c sugar

Directions:
Directions:
Bring water/juice to a boil with the salt. Add in the tapioca and cook slowly for 15 minutes or until tapioca is transparent. then add jello and sugar until dissolved. Refrigerate overnight.

The next day stir jello mixture until it is separate, then add 1 cup or more fresh fruit or canned fruit that has been drained very well. Add 8oz cool whip and stir.

This is a good salad however it make a big batch. We have made it using orange jello with canned mandarin oranges (that is my favorite) or strawberry jello with fresh strawberries. the combinations are endless.
