1 lb. Lump or Backfin Crab Meat (fresh or canned)
1 large egg - beaten
2-3 T. Mayo
2 tsp Old Bay Seasoning
1 tsp Worchester sauce
1 tsp dijon style mustard
1/2 tsp salt (I like ground sea salt)
1/4 tsp pepper
1/3 cup plain bread crumbs (or 2 slices white bread, crust removed, small pieces)

Directions:

1. Lightly pick thru crabmeat to remove any shells (set crabmeat aside).
2. Mix together beaten egg, mayo, all seasonings, and breadcrumbs.
3. Gently fold in the crabmeat to the mixture. Careful not to break up the lump crab when adding it in.
4. Refrigerate the crab meat mixture for 30-60 minutes to set/bind together.
5. Shape into 6 crab cakes.

Melt 2 T. butter in frying pan, saute the crab cakes until golden brown. About 3-5 minutes on each side. It’s good when they are a little crisp on the outside.

Serve with Remoulade Sauce or Lemon.
