Granny's Banana Pudding Recipe

(I usually double for a 13"x9" pan)
3/4 C Sugar
2 Tbs Flour
1/4 Tsp Salt
2 C Milk
3 Eggs, separated
1 Tsp Vanilla
Vanilla Wafers
Bananas

Directions:
Directions:
To make the custard:
Combine 1/2 cup sugar, flour and salt. Stir in milk.
Over medium heat, cook until thick, stirring constantly. This mixture should NOT come to a rolling boil. Cook uncovered 15 minutes more, stirring occasionally. Remove from heat.

Beat egg yolks. Very gradually stir beaten egg yolks into hot milk.

NOTE: If you do this too fast, the eggs will cook instead of incorporating into the hot milk. (If some of the egg cooks, you can remove it with a fork)

Return to medium heat and cook 5 minutes more, stirring constantly. Remove from heat and add vanilla.

Layer wafers and bananas. Pour mixture over layers.

Beat egg whites and remaining sugar until stiff. Smooth over banana pudding.

Bake at 425º until golden on the top.
