2 Eggs
1 - 15 oz Ricotta Cheese
1 - 15 oz Cottage Cheese
2 C Shredded Mozzarella Cheese
1 C Grated Parmesan Cheese, divided
1/2 C Fresh Parsley, chopped (dried parsley is fine)
1 Tsp Salt
1/8 Tsp Pepper
12 oz box of Jumbo Shells, cooked and drained
Chris & Krystal's sauce, or any prepared spaghetti sauce

Directions:

1. In a medium bowl, beat eggs lightly. Stir in ricotta, cottage cheese, mozzarella, 3/4 cup Parmesan, parsley, salt and pepper.

2. Spoon a light layer of spaghetti sauce on the bottom of a 9" x 13" pan.

3. Spoon about 2 tbl cheese mixture into each shell and arrange in the 9"x13" pan. Top with spaghetti sauce. Sprinkle with remaining Parmesan.

3. Bake at 350º for 30 minutes, or until heated through.

Variation: Throw in a bunch of chopped up fresh spinach into the cheese mixture before stuffing the shells.

*** I usually double the recipe, do half with spinach and half without, and freeze the extra stuffed shells (without the sauce) for a later date.
