1 chicken, cut up
olive oil
a bit of salt
pepper
oregano
mustard
Unflavored breadcrumbs for coating

Directions:
Directions:
Preheat oven to 400 F.
Place chicken in baking pan.
Sprinkle salt and spices on top
Sprinkle olive oil evenly atop chicken, massaging well all over.
Bake, uncovered*, for 20 minutes.
Remove from oven.
When cooled, brush mustard on each piece, and dip into a generous amount of unflavored bread crumbs.
Lower temp to 350F and return chicken to oven, uncovered, till brown.
*Note: For crispier chicken bake uncovered. If you like moister chicken, bake it uncovered for only half the time.

We found the following chicken recipe online, and it has become our specialty for Shabbos day. It's oven-fried, but with a twist. We like to serve it when we have special guests.
