3 pounds yams or sweet potatoes
4 c. thinly slced Granny Smith apples
1/4 c. (1/2 stick) butter, divided
4 tbsp. dark brown sugar, divided
Ground cinnamon
Ground nutmeg
Salt and freshly ground pepper

Directions:
Directions:
Place unpeeled yams in saucepan with water to cover. Bring to boil, lower heat to simmer, cover and cook until tender; about 20 minutes. Peel and cut into 1/4 inch thick slices.
Heat oven to 325º. Butter a shallow 2-quart baking dish. Layer half the yams in the bottom of the baking dish, followed by half the apples. Dot with 2 tbsp. butter. Sprinkle with 2 tbsp. brown sugar and cinnamon, nutmeg, salt and pepper to taste. Repeat.
Cover with foil and bake for 30 minutes. Remove cover and continue baking for an additional 25-30 minutes, or until apples are soft and surface is browned and glazed. Serve hot.
