Waterpark Meatloaf Recipe

1 ½ lb. ground beef
1 egg
1 8 oz. can tomato sauce
1 envelope onion soup mix
½-3/4 cup Jason bread crumbs
¼ cup fresh parsley*
1 cup French’s onion rings (if used, use less bread crumbs)
pepper, garlic powder (just a little)
1 can sliced mushrooms (optional)

Directions:
Directions:
Mix all but ½ can of sauce and a few onion rings together. Shape into a loaf and put into pan.
Put ¾ cup water or red wine into pan (if it evaporates, add more)
Pour remaining sauce and onion rings on top of meatloaf
Bake uncovered at 350 for about 1 hr. 15 min.

*Note to parents: Some kids don’t like to see little green leaves floating around in their meatloaf. If that is your kid, feel free to omit the parsley!

In the beginning, my Dad didn't do a whole lot of cooking, but when my Mom was in law school, he really stepped up to the plate and became the head cook in our household. He does have a few tricks up his sleeve, one of which is his meatloaf. Because the original recipe was given to my Mom by her sister Beth, the dish was named "Meatloaf Ala Beth" on the recipe card in our house. That name remained even though Dad has since tweaked it slightly.

However, when Shai and Benny were three, we took a trip with my parents. Grandpa brought his meatloaf for our dinner, and, after a long day of swimming and waterslides, my starving boys gobbled it all up. They promptly renamed the dish "Waterpark Meatloaf." So, while we concede its origin, “Waterpark Meatloaf” remains the official name of this dish.
