1/4 cup rum
1/4 cup molasses
2 tbsp olive oil
1 tbsp grated fresh ginger
1 tbsp chopped fresh cilantro
1 tsp minced jalapeno
1/4 tsp allspice
1 tbsp cracked black pepper

4 8 oz swordfish steaks

Orange Vinaigrette

2 cups orange juice
1 tbsp dijon mustard
1 1/2 tsp white wine vinegar
1/3 cup Sesame oil

Carrot salad

1/2 cup rice vinegar
1/4 cup olive oil
4 cups grated carrot

Directions:
Directions:
Combine glaze ingredients and marinate swordfish for at least 30 minutes .

Reduce the orange juice over high heat to 1/2 cup. Add mustard, vinegar, salt pepper and sesame oil.

Toss together the salad ingredients. Divide between 4 plates.
Grill the fish about 3 minutes a side. Put on carrots, cover with the vinaigrette.
