3/4 c. (1 1/2 sticks) unsalted butter, softened
3/4 c. (packed) brown sugar
1 egg
1 tsp. vanilla extract
5-6 Tbsp. black coffee
1 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
3 1/2 c. old-fashioned oats
1 c. chocolate chips coarsely ground in a food processor
1 c. chocolate chips, whole

Directions:

1. Preheat oven to 350 degrees. Cover baking sheets with parchment paper.
2. Cream together butter and brown sugar with an electric mixer.
3. Beat in the egg, vanilla, and coffee.
4. Whisk together the flour, baking soda, and salt. Stir in the oats and ground chocolate chips.
5. Stir the flour/oat mixture into the butter mixture, then add the whole chocolate chips. Mix until everything is well combined.
6. Drop by tablespoon onto cookie sheet: 12 cookies per sheet.
7. Bake 12-15 minutes. Remove from the sheet while still hot and cool on a wire rack.
