5 c. rolled oats
2. c. unsalted sunflower seeds
2 c. coarsely chopped walnuts
2 c. unsweetened coconut
1/2 c. sliced almonds or sesame seeds
3/4 c. (canola) oil
3/4 c. maple syrup (grade B is fine)
1/2 tsp. salt

Directions:

1. Heat oven to 325 degrees.
2. Combine oats, sunflower seeds, walnuts, coconut, and almonds or sesame seeds in 2 wide, shallow baking sheets.
3. Drizzle oil evenly across the contents of the two baking sheets, then stir; do the same with the maple syrup.
4. Sprinkle each pan with 1/4 tsp. salt
5. Bake until oats are golden, about 30 minutes, stirring every 10 minutes (be sure to get into the corners).
6. Store in a glass jar in the refrigerator.
