"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
1. Break up Hershey bars into small pieces and put in large pan. Add chocolate chips, marshmallow cream, and walnuts if desired. Do not mix or stir. Set aside.
2. Mix sugar, salt, butter, and evaporated milk in a large 4 - 6 quart heavy pan. Stir continuously until mixture comes to a boil. Boil and stir continuously for exactly 6 minutes.
3. Have another person ready to hold the pan with the chocolate & marshmallow cream before the 6 minutes it up. (One person will hold the pan tightly while the other stirs vigorously!) Pour hot mixture over the chocolate and marshmallow cream mixture. Stir vigorously until all chocolate is melted and well mixed. It will thicken and set up fast.
