1/2 cup butter
1/4 cup sugar
1/4 tsp salt
1 c (4 oz) shredded Swiss cheese
1 1/4 cup all purpose flour
2 TBSP milk
1 cup flaked coconut

TOPPINGS
Spring: Arrange orange sections, fresh pineapple and strawberries in circles around the cooked crust. Melt 1/4 cup orange marmalade and drizzle over fruit.
Summer: Arrange Strawberries, fresh pineapple, and pecans halves. Melt 1/4 cup strawberry jelly and drizzle over fruit.
Fall: Arrange apple slices, pear (both unpeeled) slices, and red grapes over cooked crust. Melt 1/4 cup apple jelly and drizzle over fruit.

Cream butter, sugar and salt. Gradually add cheese and beat until well combined.
Add flour, alternately with milk. Turn dough into a buttered 12" pizza pan; pat dough out to cover pan. Crimp edges.
Bake at 375ºF for five (5) minutes. Sprinkle with coconut and continue baking 15 minutes or until crust and coconut are light brown. Cool

Arrange toppings of your choice.

This is very different from the more traditional sugar cookie fruit pizza crust and I think its much better. I have served this for brunch as well as for dessert.
