7 large merletons (can substitute 4 or 5 small yellow squash)
2 medium onions or 1 large, chopped
3 cloves garlic, chopped
2 stalks celery, chopped
1 small bell pepper, chopped
1 # small shrimp or cut up large shrimp
Cajun seasoning to taste
Enough buttered bread crumbs to top entire dish

Boil merletons until soft. Half and remove seeds. Save shells. Mash slightly including 2 shell halves. (If substituting yellow squash mash the entire squash) In a little olive oil, fry onion, celery, garlic and bell pepper until soft. Add shrimp. Cook until pink. Remove from heat and add cajun seasoning. Mix with merleton mash, stuff shells and place in a greased baking dish (If substituting yellow squash mix and spread in greased baking dish). Top with buttered bread crumbs. Bake at 350º until browned. About 35 minutes.
