Ingredients: 1 box devil's food cake mix Mousse Icing: 1/4 cup flour 1/4 cup milk 1 1/2 sticks butter or margarine at room temperature 1/2 cup peanut butter 2 cups powdered sugar 1/2 tsp. vanilla 1 small dark chocolate bar, or 1/2 a cup semi sweet chocolate chips

Directions:Bake cake according to package directions in 2 9 inch pans. Cool completely. Make the Mousse: In a medium saucepan, whisk flour and milk over medium heat. Cook 1-2 minutes until thickened, whisking to keep smooth; remove from heat and stir in 1 T. butter. Refrigerate. In a large bowl, beat remaining butter and peanut butter 1 minute until smooth. Gradually beat in sugar and vanilla. Slowly add flour mixture- continue beating until light and fluffy. Fill and grost cake. Break chocolate into chunks and sprinkle on the top of the cake. Return to the refrigerator for a few minutes to set up. |
