1/2 C butter or margarine, softened
3/4 C brown sugar
3/4 C cup white sugar
2 eggs, slightly beaten
½ C buttermilk or soured milk
3 bananas, overripe and mashed (large)
3 C flour
1½ tsp baking soda
½ tsp salt
½ C broken walnuts or pecans
1 -2 C frozen or fresh cranberries or blueberries
Raw Sugar (just enough to sprinkle tops) or 4 -6 Tbsp brown sugar

Directions:

In a large bowl cream butter and sugars. Beat in eggs, buttermilk and bananas.

Sift dry ingredients together and mix into wet mixture. Don't over-beat.

Stir in nuts and berries. Mixture will be quite firm.

Divide the mixture into 2 greased and floured loaf pans or spread into one bundt pan. Sprinkle with sugar (down the center of each loaf or over the top of the bundt cake..


Bake at 325 degrees for 65-70 minute (test before removing from over) should be nicely browned and an inserted toothpick should come out clean.

You can sub cherries, blueberries, etc for cranberries
