2 - 3 packages of cheese tortellini
1 quart of heavy whipping cream (I use half and half whipping cream)
5 - 8 sundried tomatoes in oil
1-2 cups of ham or turkey ham
8 to 12 oz of fresh mushrooms, sliced
2 - 3 cups of frozen peas
Green onion scallions (optional)
Romano or Parmesan cheese to sprinkle on top

Using a large frying pan coated with olive oil spray, saute mushrooms and sundried tomatoes. Add ham and cook on low heat till ham is warm. Meanwhile, cook peas in the microwave. Make a rue by combining 1/4 to 1/2 cup of flour in a small bowl with 1 cup of whipping cream. Mix till smooth. Add peas to frying pan. Then add flour mixture to the pan and mix with ingredients till smooth. Slowly add rest of the whipping cream but don't let lumps form. The sauce should be about the consistency of a spaghetti sauce, not too thin or too thick. If it's too thick, add more whipping cream (or milk). If it's too thin, make another rue mixture in a bowl and add that to the sauce mixture. Reduce to low heat. You can cook the tortellini according to package directions while you are making the sauce. Pour sauce over well drained tortellini and serve with Romano or Parmesan cheese.

You can easily make this recipe smaller or larger by reducing the amount of tortellini and making a smaller sauce. Ingredients are actually added according to taste. If you don't like peas, just add fewer. I usually add lots of mushrooms and sundried tomatoes.
