2 1/2 lb filet of beef
2 6 oz jars marinated artichoke hearts
1 garlic clove
1/4 cup wine vinegar
1/2 cup olive oil
2 baguettes sliced 1/2 " thick toasted
2 bunches of arugula washed and shredded
Parmesan curls , formed with a vegetable peeler

Directions:
Directions:
Roast the beef at 500 for 23 minutes or until it is at 125 for medium rare. Let cool. Puree the artichoke hearts, garlic, vinegar, oil, salt and pepper. Spread on toast . Top with arugula, then the beef and the parmesan.
