1 pkg (8 oz) cream cheese, softened
1/3 cup sugar
2 T of rum or ½ tsp rum extract
3 ½ cups thawed Cool Whip
1 can (8 ¼ oz) crushed pineapple in syrup
2 2/3 cups (7 oz) Baker’s Angel Flake Coconut

Directions:

Beat cream cheese with sugar and rum until smooth. Fold in 2 cups of the whipped topping, pineapple with syrup and 2 cups of the coconut, spread in 8 inch pie pan. Spread remaining cool whip over the top then sprinkle with remaining coconut.

Freeze until firm, 4-6 hours (overnight works best). Cut into wedges. Garnish with pineapple or cherries, if desired.
