2 1/2 C Sugar
1/2 C Water
1/2 C Karo Syrup
2 Egg Whites
1 Tsp. Vanilla
1/2 C Broken Pecans (Optional)

Directions:
Over a low fire, combine sugar, water and Karo Syrup until the sugar has dissolved. Turn fire to medium heat and let syrup come to a boil.

Cover pan for 2 or 3 minutes to dissolve the crystals on the side of the pan. Remove lid and bring syrup to 245º or a firm ball in cold water.

Have ready: 2 egg whites beaten until stiff.

Pour 1/2 of the syrup VERY SLOWLY into the egg whites, beating all the time.

While egg white mixture is beating, return the remaining syrup to the fire and bring it to 290º or hard ball that will crack.

Slowly add syrup to the egg whites and beat until the gloss disappears. (Takes awhile). Add vanilla and pecans.

Press into a lightly buttered pan, cool and cut.

NOTE: After the first syrup had been added, KEEP BEATING CONSTANTLY until you pour the candy up.

Only make on clear, dry days.
