2lbs potatoes
3egg yokes (no whites)
1 1/2cup grated Cheese (locatelli Cheese) grandma's choice
3 tbsp Italian parsley
1 tsp. pepper
Italian bread crumbs (progreso) grandma's choice
2 tbsp veggatable oil

Directions:
Directions:
Boil potatoes in a pot of water until a fork can stick through easily
cool,then peel and mash thoroughly
Add parsley, cheese,pepper- mix together
You can add 2tbsp melted butter if desired
Roll mixture into 2inch by 3inch long peices ( wet hands if sticky)
Dip peices in egg yoke then roll into bread crumbs

Heat 2tlsps vegetable oil in frying pan-keep on low-
Place crotchets into pan turn until all sides are lightly browned.
