1 c red, white or a mix of both quinoa
2 1/2 c water
1 pomegranate, seeded
1/2 c feta cheese
1/2 c chopped cilantro
1 green onion, chopped
1/2 c almonds
1/2 c pistachios
5 tbsp of olive oil to taste
1 lemon juiced
sea salt
olive oil (a good quality)

Directions:
Directions:
Rinse quinoa well (or it will be bitter), boil it with two cups of water. When all the water has boiled away, let it cool.

Chop cilantro & mix with pomegranate & green onion. Saute almonds & pistachios in olive oil (I would use coconut oil for sautéing & olive oil for taste) until lightly brown.

Mix all ingredients & add lemon, olive oil, salt & pepper.
