Ingredients: 1 c. vegetable oil 2 c. granulated sugar 3 eggs, slightly beaten 1 tsp. vanilla 2 1/2 c. flour 1 tsp. salt 1 tsp. baking soda 2 tsp. cinnamon 1 tsp. baking soda 3 c. finely-chopped, peeled apples (such as Granny Smiths) 1 c. nuts

Directions:Beat together oil, sugar, eggs and vanilla. Stir all dry ingredients together and then add them to the egg mixture and stir. Add apples and nuts and stir. Spread into a greased and floured 9x13-inch pan. Bake in a 350º oven for 40 to 50 minutes or until an inserted knife comes out clean. Cool cake in pan. Dust with powdered sugar just before serving. |

Notes: Any apple will work, but a tart apple like a Granny Smith is best. As you cut the apples, place them in a bowl of ice water with lemon added to keep the apples from turning brown. This cake is even better the second day. It can be eaten as a breakfast cake or dessert.
