1 c. vegetable oil
2 c. granulated sugar
3 eggs, slightly beaten
1 tsp. vanilla
2 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. baking soda
3 c. finely-chopped, peeled apples (such as Granny Smiths)
1 c. nuts

Directions:

Beat together oil, sugar, eggs and vanilla. Stir all dry ingredients together and then add them to the egg mixture and stir. Add apples and nuts and stir. Spread into a greased and floured 9x13-inch pan. Bake in a 350º oven for 40 to 50 minutes or until an inserted knife comes out clean. Cool cake in pan. Dust with powdered sugar just before serving.

Any apple will work, but a tart apple like a Granny Smith is best. As you cut the apples, place them in a bowl of ice water with lemon added to keep the apples from turning brown. This cake is even better the second day. It can be eaten as a breakfast cake or dessert.
