1/2 c. fat-free mayo
1 Tbsp. onions, minced
1 lb. eggplants, 1/2 inch slices
1/3 c. fine breadcrumbs
1/3 c. parmesan cheese, grated
1/2 tsp. dried Italian seasoning
vegetable oil cooking spray

Directions:
Directions:
Combine mayo and onions and spread evenly over both sides of eggplant. Combine breadcrumbs, cheese, and Italian seasoning in shallow bowl. Dredge eggplant in breadcrumbs mixture. Place eggplant on baking sheet coated with spray. Bake at 425º for 12 minutes. Turn eggplant over and bake for another 12 minutes until golden.
