1 cup sifted flour
1/2 cup shortening
1 egg
1 tsp baking powder
1 tsp salt
1 tsp vanilla
1 tbsp milk
Sift dry ingredients cut in shortening, beat eggs milk and vanilla together. Mix and press into 8x8 inch greased pan.
Filling:
6 tbsp white sugar
1 1/2 cup crushed pineapple
1 tbsp lemon juice
4 1/2 tsp cornstarch
1 egg
(may add cherries)
Dissolve cornstarch in some of the pineapple juice simmer all but the egg till thick. Beat egg and some of the hot mixture to it. Combine all and cook one minute more. Cool and pour over dough in pan.
Topping:
1 egg beaten
1 tsp vanilla
2 cups coconut
1 tbsp melted butter
1 cup sugar

Stir sugar into beaten egg. Add rest of ingredients, spread on the pineapple mixture and bake at 350 degree for 30 minutes.
