2 lb. peeled shrimp
1 stick butter
1 8oz. pkg. cream cheese
1 onion, chopped
1 bell pepper, chopped
8oz. sliced mushrooms
1 can cream of mushroom soup
1 Tbsp. garlic powder
1/2 tsp. red pepper
1/2 tsp. black pepper
2 cups velveeta cheese
2-3 cups cooked rice
1 can fried onion rings

In Dutch oven, melt butter and saute onion, bell pepper and mushrooms until tender. Add shrimp and cook, covered until heated. Add cream cheese and soup and heat. Stir in rice and seasonings. Top with cheese and onion rings and bake uncovered at 350 for 20-30 min.
